You should look for breads whose first ingredients are whole grains, 100% whole-wheat flour, wheat bran and/or oats. Breads with at least 3 grams of fiber and all natural grains provide lasting health benefits.
With a focus on natural, this simple bread recipe is guilt-free, packed with nutrients and tastes great! Bread lovers can now start their day with “wonder” toast in the morning, create amazing sandwiches for lunch or use it to soak-up turkey juices at Thanksgiving.
Wonder Bread: Makes 16 slices
1 1/2 cups of water at room temperature
2 1/2 tbs no sugar added applesauce
1 sugar substitute packet (optional)
3 cups all natural whole wheat flour
1 cup wheat bran
1 tsp pure vanilla extract
2 tbs gluten flour
1 1/2 tsp quick rise yeast
1 1/2 tsp salt
1/2 cup of chopped almonds (optional)
In a large mixing bowl, using an electric mixer, add each ingredient to form rough dough. If you find the mixture is too moist, gradually add wheat flour. Let dough stand for 15 mins.
Place dough on a lightly floured surface and kneed for approx. 10 mins, until dough is smooth and elastic. Place dough in a large bowl sprayed with non-stick cooking spray and cover with a moist cloth. Allow dough to rise for an hour and twenty mins.
Preheat oven to 350 degrees. Turn dough onto a board and shape as desired. Coat a 8 1/2" x 4 1/2” bread pan with cooking spray and place dough in the pan. Bake the bread for 40-45 mins. Remove bread from the oven and place on a cooling rack.
For additional healthy alternatives, try experimenting with almond extract, walnuts, flax seed, buckwheat flour, oatmeal or even adding 1/4 cup of apples or bananas.
