NF healthy eating with style...

Are you a breakfast lover like me and can’t stand the thought of giving up pancakes or waffles? Start your day with a nourishing pancake breakfast made with the whole grains found in oatmeal. This recipe will give you vital nutrients including 5g of fiber and 28g of protein. You will find an increase in your energy level and a happy stomach.

Oatmeal Pancakes with blueberries: One Serving

1/2 cup old fashioned oatmeal (not quick-cook)
1/4 cup of fat free cottage cheese
2 eggs (egg beaters preferred)
1 tsp vanilla extract
1 tsp cinnamon (can add more for taste I use a 1tb)
1/4 tsp nutmeg
1 tb fat-free half and half
1/4 cup blueberries
Carey’s Sugar Free Maple Syrup
*may add 1tb of chopped walnuts for addition protein to batter

In blender, blend all ingredients except the blueberries until smooth. For thicker pancakes you can add more oatmeal as desired. Spray a nonstick skillet with cooking spray and heat to med-high. (Batter can be used in a waffle maker).

Pour batter and cook until pancakes are set. Add blueberries before you flip the pancake and cook until slightly brown. Serve with sugar free syrup and enjoy!!!

For additional healthy fruit alternatives, try raspberries or blackberries packed with 7.4 to 8 grams of fiber per cup.
