About a year and a half ago.. Chef and friend Phil McDonald came to my house to cook for a friend and I. One of his appetizers was a hand made pizza with the most amazing sauce.. I couldn't place on of the ingredients with this amazing taste that just completed the pallet of the meal.. SMOKED PAPRIKA!!! Now one of my favorite flavors to add to sauces, I wanted to share a favorite meal I like to make..
Portobello Mushrooms Filled with Sauce:
Ingredient:
Large Portobello mushroom caps (number based on people)-cleaned and stems saved
Ricotta Cheese
Roasted Garlic
Smoke Paprika ( you can find it at Modica Market for my locals)
Organic Tomato Sauce
Dried oregano and basil
In a blender add ricotta cheese, roasted garlic and start with a pinch of smoked paprika. Based on the amount of servings, add the smoked paprika to taste. Mix well, remove and place in a bowl.
Mix together in the blender tomato sauce, pinch of oregano and basil to taste., and mushroom stems. Just pulse a few times leaving it a little chunky.
Spray a baking dish with no=stick spray. Place mushroom caps face down with bottoms up. Scoop ricotta cheese mixture in to each cap evenly and then top with tomato sauce.
Broil in the oven for about 10mins and serve.. so good!! You can also add spinach as the first layer in the caps for additional ingredients. ENJOY!
Clean the portables and remove the stems.
