All natural addictive banana muffins..

Ingredients:

1/2 c oat flour
2 tblspn oats (to sprinkle on top if desires)
1c whole-wheat flour or sorghum flour
1 tsp baking soda
1/4c flax seed (optional for extra protein)
1-1/2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
2 eggs beaten (or egg beaters)
1 container of unsweetened applesauce
2 tblspn honey
3 medium to small bananas (mashed up)
1/4 c chopped walnuts or pecans (optional)

Preheat oven to 350.
In a large bowl whisk together flours, flax seed (if used), baking soda and powder, cinnamon and nutmeg. In a separate bowl whisk together all wet ingredients. Combine mixtures and fold in nuts if desired. Spoon batter in to sprayed or paper lined muffin cups, sprinkle with oats if desired. Bake for 18-25 minutes depending on how hot your oven cooks. Check by sticking a clean knife blade in to a few to check.
Makes 12 muffins.. fat and protein will vary based on nuts and flax seed.
You can also add cranberries, zucchini, carrots, raisins and other fruits to add variety.. ENJOY!
