- Speed sift: whisking together the dry ingredients will allow for better distribution of the ingredients.
- Don't whip it: unlike cake batter, muffins are meant to be a little lumpy (hmm don't we wish we all had that grace!) Two much beating can lead to dry muffins or dense ones (hmm that seems to be a trait out there!)
- Go down the middle: (yes you can make your own comment) Bake your muffins on the center shelf of the oven for better distribution.
- Healthy Substitutes: Applesauce in place of oil, fruit juice and concentrates & honey in place of sugar. Use your old bananas in place of oil or just for great flavor! Add fruits for extra vitamins!
- Touch Test: touch the middle top of the muffin and see if it springs back, then they are done.
- if you can.. Resist: I know they smell good! but if you let a muffin sit about 5 minutes, they will still bake when they are out of the oven. This will allow the centers to cook and taste better.

I have a zucchini bread recipe that calls for 1 C. of vegetable oil that I substitute with 1/2 C. of applesauce and 1/2 C. of coconut oil. It always turns out delicious! Great suggestions.
